The cheese we manufacture is natural cheese like Cheddar, Monterey Jack, and Colby. All cheese is made from pasteurized cow’s milk. Hilmar Cheese Company serves business-to-business customers throughout the U.S.A. and the world. Our cheese is used by private label, regional and national brand cheese packagers for retail grocery, food service, and ingredients.
Whey Protein and Lactose Manufacturer
We produce and market special dairy components not used in cheese-making – whey protein, a protein found naturally in milk; and lactose, a unique carbohydrate found only in milk. These ingredients are used by food and beverage manufacturers around the world for their nutritional contribution to good health and their functional contribution to formulations. Hilmar Ingredients sells truck-load quantities only and does not sell products directly to consumers.

Cheese Shapes and Package Types
Most cheese varieties are available in 40-pound (20Kg) blocks packaged in corrugated paper boxes, 640-pound (300 kg) blocks packaged in returnable containers.
We sell truck-load quantities business-to-business only. Our Visitor Center offers retail-sized cheese that can be purchased by consumers.
