October 5, 2006, HILMAR, CA – With a blend of locally fresh ingredients and true talent for tantalizing taste buds, Hilmar Cheese Company Catering’s Chef Kevin VanderBes will showcases his talents for a delicious and relaxing evening to kick off the holiday season. Hilmar Cheese Company Catering is hosting a Taste of the Holidays Dinner on Friday, November, 10, 2006. Saturday, November 11, 2006 is the Hilmar Cheese Company Open House. Both events are open to the public and will provide a pleasant atmosphere for friends and family to gather and enjoy time before the holiday rush.

The community is invited to experience Hilmar Cheese Company Catering’s creative menu design. The dining experience begins with a centerpiece hors d’oeuvres display of local artisan cheeses, select fruits and seasonal vegetables. The main course features grilled natural breast of chicken with roasted shallot, artichoke and tarragon cream; slow-roasted beef short ribs with pearl onions, red wine and mushroom sauce; and cedar-planked Pacific Salmon with lemon-Dijon glaze, forest herbs and capers. The deliciously creative side-dishes of mashed Yukon Gold Potatoes with Hilmar Cheese Company cream cheese and chives and cauliflower, red peppers and baby carrots with lemon zest and shallots nicely complement the entrées. Hilmar Cheese Company’s Pumpkin Cheese Pie with maple-pecan sauce will be served for dessert to complete the meal.
“The event has grown as word has traveled,” explains Dave Gonsalves, Visitor Center Manager. “Chef VanderBes’ background in Napa Valley and culinary talents has developed Hilmar Cheese Company Catering reputation as one of the Central Valley’s premier caterers -famous for presentation, service and exquisite meals.”
The venue will also feature the saxophone music of Al Ward and keyboard talents of Dale Hines. Guests will also have the opportunity to order their holiday gifts early as Hilmar Cheese Company unveils its 2006-2007 gift baskets and gift packs featuring local products.

Santa visits Hilmar Cheese Company Holiday Open House Saturday, November 11, 2006
Saturday will feature gourmet food vendors with a wide variety of treats and complimentary samples. Taste delicious local and Napa valley foods and enjoy cheese samples. A delicious brunch will be served from 8:00 a.m. until 2:00 p.m. $12 per person. Wine Tasting is from 12:00 p.m. to 3:00 p.m. with Doug Hayes from the Estates Wine Group to feature a vareity of great holiday wines perfect for entertaining. Wine tasting is $7.95 and includes a souvenir Hilmar Cheese Company etched wine glass. Holiday music will fill the air with barbershop quartets roaming throughout the afternoon.
Santa and “Daisy” the Jersey cow character arrive at 11:00 for family photos. Be sure to bring your camera and take your holiday photo early. The day will be fun filled for guests of all ages!
The Hilmar Cheese Company Visitor Center opened in 1998. Visitors enjoy complimentary tours and cheese tasting. The Café features signature sandwiches, gourmet pizza, homemade soups, salads and desserts along with Starbucks espresso and an ice cream counter. Gift baskets and packages, gourmet foods, specialty items and a large selection of cheese are available in the gift shop. The facility is open for banquets and offers full-service onsite and off-site catering.
The Hilmar Cheese Company Visitor Center is located off of Highway 99. Exit Lander (Highway 165) and travel south 4 miles. The Hilmar Cheese Company Visitor Center is located on the right side, on the corner of August and Lander Avenues. Open 7:00 a.m. to 7:00 p.m. daily, except major holidays.
