In 1984, twelve Central California dairy families, seeking to maximize the value of their Jersey cows' high solids milk, created the Hilmar Cheese Company. They invested heavily in research, the latest technology and staff excellence – a practice that continues to guide the privately held company today. Committed to continuous improvement and innovation, the company has grown to be the world’s largest single-site producer of cheddar cheese and whey products. Our Business

Hilmar Cheese Company converts an abundance of high-quality milk, received from more than 270 dairy farms, into a variety of cheese and whey products every day. Hilmar Cheese Company has two facilities; corporate headquarters located in Hilmar, in the center of California’s fertile Central Valley producing more milk than any other region in the world and Dalhart, Texas in the center of the United States.  Our steady supply of fresh milk ensures our customers of consistent, year-round availability of product.

Hilmar Cheese Company specializes in the production of cheddar and American cheese utilized by private label and national brand, retail and foodservice companies across America. While rare among large manufacturing sites, Hilmar Cheese Company has the unique ability to produce a range of cheese in large volumes and the flexibility to adjust quickly to our customers’ changing needs.

Hilmar Ingredients, a division of Hilmar Cheese, is a leader in value-added products. Our whey products are sold worldwide for use in such diverse applications as frozen dinners, processed cheeses, fast food, baking ingredients, infant formulas, nutrition products, confectioneries and many others.
